Nixtamalization – From Ancient Grain to Masa

People don’t often think of corn as an ancient grain but it is. It’s literally thousands of years old and created by ancient farmers in Mexico. The corn we know today has no resemblance to its wild ancestors that still exist throughout the Americas.In this class, we will discuss its origin and significance throughout modern human history. We will participate in a hands-on experience of transforming dry kernels of corn to Masa through the little-known and amazing process referred to as nixtamalization. After processing the corn we will hand grind the cooked corn make tortillas and top them with farm-fresh ingredients!For any questions, please email paul.maschka@rcdsandiego.orgDisclaimer: Class size is limited to ensure maximum participation. Acceptance into the class is on a first paid/first-served basis. Once we are sold out, we can’t guarantee a place in the class. Walk-up purchases the day of class will incur an additional $5 charge, so make sure you purchase by 11:30 PM the night before class! Space or class materials are not guaranteed for you.
